[origin: WO2023281229A2] The invention aims to provide a new food product based on processed wheat grains that are rich in sugars. To this end, the invention relates to a food product comprising processed wheat grains, characterised in that these wheat grains have a milling yield RM, achieved in accordance with standard NF EN ISO 27971, expressed as wt.% of dry matter in relation to the whole wheat grains, of 0.5 ≤ RM ≤ 10.10. The invention also relates to a processing method for obtaining the food product according to the invention, as well as to the mutant wheat used in the invention and the applications of this food product.
