(54) Method for manufacture of cysteine-containing food material


(57) [Problem] The matter to be solved is to provide a method by which cysteine is efficiently prepared from γ-glutamylcysteine and also to provide an excellent method for the manufacture of a food material containing a high amount of cysteine from yeast extract.
[Solution] A method for the manufacture of a food material containing a high amount of cysteine, characterized in that, a yeast extract is prepared from yeast cells containing γ-glutamylcysteine, the extract is concentrated by controlling at the temperature of as low as not higher than 60°C to prepare a food material in a liquid form where the solid concentration is not less than 10% and the food material is kept at 70 to 130°C.
